五、性狀:無色透明斜方晶系結(jié)晶。相對密度1.769(50℃)。易溶于水(0℃時70.6g/100mL水,100℃時103.8g/100mL水),水溶液呈酸性。不溶于乙醇、丙酮和氨。與堿類作用放出氨氣。易潮解。
六、用途:GB 2760-2011 加工助劑:限用于發(fā)酵工藝中用作發(fā)酵用營養(yǎng)物質(zhì)。亦用于面團調(diào)節(jié)劑;酵母食料。用作鮮酵母生產(chǎn)中酵母菌培養(yǎng)用氮源,用量不規(guī)定。作為面包中酵母養(yǎng)料中的用量約10%(約為小麥粉量的0.25%)。
七、包裝:內(nèi)襯聚乙烯塑料袋,外套復(fù)合塑料編織袋,每袋凈重25kg。
八、貯存與運輸:本品應(yīng)貯存在干燥通風(fēng)清潔的庫房中,裝載運輸時要輕裝輕放,防止包裝破損,防止受潮、受熱,運輸過程中防止雨淋受潮,應(yīng)與有毒物品隔離。

5、Character: It is colorless transparent orthorhombic crystal, deliquescent. Relative density is 1.769(50℃). It’s soluble in water(At 0℃, solubility is 70.6g/100mLwater; 100℃, 103.8g/100mLwater). Aqueous solution is acidic. It’s insoluble in ethanol, acetone or ammonia. It reacts with the alkalies to form ammonia.
6、Usage: According to GB 2760-2011, it could be used as processing aid (only used as nutrient for fermentation). It also could be used as dough regulator and yeast food. In fresh yeast production, it’s the nitrogen source for yeast cultivation (Dosage is not specified.). Dosage is about 10% (about 0.25% for wheat powder) for yeast nutrient in bread.
7、Packing: It is packed with polyethylene bag as inner layer, and a compound plastic woven bag as outer layer. The net weight of each bag is 25kg.
8、Storage and Transport: It should be stored in a dry and ventilative warehouse, kept away from heat and moisture during transportation, unloaded with care so as to avoid damage. Furthermore, it must be stored separately from poisonous substances.
